Fresh raspberries are one of nature’s most decadent gifts. However, implementing fresh raspberries into everything is difficult. You have to contend with their availability during various seasons, and it’s difficult to incorporate them properly into a lot of dishes. Think about how complicated it would be to get raspberries into a special icing or drink without berry bits ruining the entire dish.
That’s where raspberry flavor extracts come in. Especially the oil-soluble variants that are far easier to use in recipes since they don’t separate from oils.
However, once you have a good raspberry extract, there is a lot you can do to get fresh raspberry flavor into a multitude of dishes.
We’re going to go over 3 oil-soluble raspberry flavoring recipes to help you beef up your culinary repertoire.
1: Raspberry Iced Fudge
Iced fudge is one of those overly decadent dishes that you only want to indulge in every once in a while. So, why not crank it up a notch the next time you have it with some smooth, decadent, flavorful, buttercream icing?
To start, you need some basic fudge. Homemade is best. Here’s a standard recipe for you to use, but any fudge recipe will work. This is just a base. If you’re crunched for time, feel free to buy some store-bought fudge.
Simply mix one can of sweetened condensed milk with 2 cups of semi-sweet chocolate morsels, and mix them over low heat in a saucepan. Mix the two ingredients together with a spatula while it slowly heats up and melts the chocolate. Do not use a mixer.
Line a baking pan with parchment paper, and then pour the fudge mixture into the pan. Refrigerate it for 2 hours.
Now for the raspberry part of the recipe. You’re going to make your own buttercream icing.
You’ll need the following ingredients.
- 3 cups powdered sugar
- 1/3 cup softened butter
- 1 ½ teaspoon raspberry extract
- 2 tablespoons milk
This is an extremely basic buttercream frosting recipe, and all we did was switch out the vanilla extract for a raspberry flavor extract.
To make it, mix everything together at a low speed with a hand mixer. You can also use a whisk. Don’t use all your milk at once. Use half of it first, and after a few minutes of beating the frosting, see if the texture is right. If not, add the rest of the milk, and mix it some more. If it’s too runny, add small amounts of powdered sugar until the right consistency is achieved.
Now, you have raspberry-flavored buttercream frosting. Optionally, you can add purple or magenta food coloring to get that raspberry coloring that’s so appealing.
Once your fudge is firm, frost it with your homemade frosting, and you’re ready to enjoy a decadent raspberry fudge dessert.
2: Raspberry Gummies
If you’re a fan of chewy candy and raspberries, this is the perfect sweet recipe for you. It’s not overly rich and decadent like the fudge recipe, either. So, you can make it slightly more often without feeling like you’re indulging too much.
This is also a minimum-ingredient recipe. It’s mostly gelatin and water.
To start, get 4 and ½ ounces of unflavored gelatin and 1/2 cup of water. You’re going to need 2 tablespoons of raspberry flavor extract, and it all looks a lot better if you have some purple or magenta food coloring you can use a few drops of it.
Optionally, you can use silicone molds to create fun-shaped gummies, but you can also simply mold them on a tray and cut them into cubes. The choice is yours.
Now, start by mixing your water and gelatin in a saucepan until it dissolves and thickens. Once thickened, put it on the stove over medium heat, and stirring occasionally, cook it for four minutes until it’s fully melted. Once melted, remove the mixture from the heat, add your flavoring, and add a few drops of food coloring. Give it one last mix to incorporate everything well, and it’s time to mold it.
Use cooking spray to lubricate the baking sheet or silicone molds you’re using, and then pour the melted mixture into the molding vessel.
All you have to do once the gummies are in their molding vessel is refrigerate them for 20 to 30 minutes until they’re fully set.
That’s it.
Optionally, you can sprinkle malic acid to make them sour, or you can use granulated sugar to make them a little sweeter.
To store them, use a gallon freezer bag, and squeeze out all the air. If you store them in a cool dry place, they’ll last a few weeks with ease.
3: Creamy Strawberry Raspberry Vodka Cocktail
Finally, here’s one oil-soluble raspberry flavoring recipe solely for the adults reading this. When you’ve spent all day working, and you’re ready to just sit back and relax, it’s cocktail time. Luckily, your supply of raspberry extract isn’t just for food. It can be used in drinks, too.
This is simple, but it’s a multi-flavor drink.
To start, add 3 cubes of ice to a cocktail glass. With a shaker, mix a double shot of vodka with 2 teaspoons of raspberry extract and one shot of strawberry crème liquor.
To top it off, you can add a straw and top it with whipped cream.
Obviously, this is going to be a sweeter cocktail. So, it’s not going to suit everyone. However, if you love strawberry raspberry juice drinks, creamy alcohol, and have a sweet tooth, this is a great way to relax with a movie and kick back for the evening.
