To make these Cinnamon Fall Truffles, heat heavy cream until hot, then pour it over chopped chocolate to create a smooth ganache. Stir in cinnamon extract, vanilla, and salt for a warm, aromatic flavor. Chill the ganache until firm, then scoop and roll into balls. Coat the truffles in cocoa powder, powdered sugar, or dip in melted chocolate for a polished finish. These truffles are perfect for gifting, entertaining, or enjoying as a cozy seasonal treat.
Ingredients
- 8 oz semi-sweet or dark chocolate, chopped
- 1/2 cup heavy cream
- 1–1.5 tsp Cinnamon Flavoring / Extract
- 1 tsp vanilla extract
- Pinch of salt
- Cocoa powder, powdered sugar, or melted chocolate for rolling
Directions
Prepare the Ganache Place chopped chocolate in a heatproof bowl.
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
- Pour the hot cream over the chopped chocolate and let sit 1–2 minutes.
- Stir gently until the chocolate is fully melted and the ganache is smooth.
Add Flavoring Mix in Cinnamon Flavoring, vanilla extract, and a pinch of salt until fully combined.
Chill the Ganache Cover the bowl with plastic wrap and refrigerate for 1–2 hours, or until the ganache is firm enough to scoop.
Form the Truffles Using a small cookie scoop or spoon, scoop out portions of ganache and roll into balls between your palms.
Coat the Truffles Roll the truffles in cocoa powder, powdered sugar, or dip in melted chocolate to coat evenly.
- Place the coated truffles on a parchment-lined tray and refrigerate until firm.
Serve or Store Serve immediately or store in an airtight container in the refrigerator for up to 2 weeks.
