Directions
Create the crust. Mix together graham cracker crumbs and melted butter until well-coated, then press firmly into the bottoms of 6–8 serving cups.
Blend the filling. In a bowl, beat the softened cream cheese with sugar and vanilla extract until smooth. Add heavy cream, then whisk until the mixture becomes light and creamy.
Infuse with pink lemonade extract. Stir in the pink lemonade flavor extract (start with ½ teaspoon and adjust based on preference—extracts are potent). Incorporate a few drops of pink food coloring, if using, to accentuate the color.
Assemble layers. Spoon half the filling into cups. Add a delicate swirl of more extract for an extra burst of lemonade essence. Top with remaining cheesecake mixture, gently smoothing the surface.
Chill to set. Refrigerate the cups for at least 2 hours until firm and chilled.
