    • 1 ¾ cups (350g) granulated sugar
    • 3 large eggs, room temperature
    • 1 cup (240ml) neutral oil (canola or vegetable)
    • ¾ cup (180ml) buttermilk, room temperature
    • 1 cup (240g) crushed pineapple, well-drained
    • 1 ½ tsp oil-soluble pineapple flavoring extract
    • 1 tsp vanilla extract
    • Zest of 1 lime (optional)

For the Pineapple Cream Cheese Frosting:

    • 8 oz (226g) cream cheese, softened
    • ½ cup (113g) unsalted butter, softened
    • 3 cups (360g) powdered sugar, sifted
    • 1 tsp oil-soluble pineapple flavoring extract
    • 1 tsp vanilla extract
    • Pinch of salt

    Optional Toppings:

    • Toasted coconut flakes
    • Lime zest
    • Dried pineapple flowers or slices

    Directions

    1. To make this delicious tropical pineapple cake with oil-soluble flavoring extract, begin by preheating your oven to 350°F (175°C).

    2. Grease and line two 9-inch round cake pans with parchment paper.

    3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

    4. In a large bowl, beat sugar, eggs, and oil until pale and creamy.

    5. Stir in the buttermilk, vanilla extract, and oil-soluble pineapple flavoring extract.

    6. Fold in the crushed pineapple and optional lime zest.

    7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

    8. Divide the batter evenly between the pans and bake for 28–32 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

    9. While the cakes cool, make the frosting by beating together softened cream cheese and butter until fluffy.

    10. Add sifted powdered sugar gradually, followed by the pineapple oil-soluble extract and vanilla.

    11. Beat until smooth. Once the cake layers are cool, frost the first layer, stack the second on top, and apply a generous coat of frosting over the entire cake. Decorate with toasted coconut, lime zest, or dried pineapple slices for a festive tropical finish.
