Made for your next recipe trial

Three directions for your next cookie trial.

Start with an established recipe and test the finished result in your own kitchen.

01 / DEVELOPMENT IDEA

Ube crinkle cookies

Explore purple ube flavor in your established crinkle-cookie recipe. Keep the dough structure and coating method your recipe needs.

02 / DEVELOPMENT IDEA

Ube white chocolate chip

Try a purple ube dough with white chocolate chips as a separate mix-in. Add the flavor to the compatible dough, not directly to melted chocolate.

Take inspiration from the creator collaboration below. Develop your own dough and cookie-piece balance, then assess a fully baked, cooled cookie.

Development ideas, not kitchen-tested recipes. Confirm flavor, color, texture and yield before serving or scaling.

Measure first. Make it repeatable.

How much flavor goes in your cookie dough?

Start at 0.3–0.6% of the unflavored base weight. Weigh the flavor and add it on top of that base.

Use the unflavored dough component you are flavoring, not the weight of the baked cookies. Treat a separate filling or coating as its own component.

Your 1 kg starting trial

1,000 g unflavored base
+ 3–6 g flavor

1,003–1,006 g after adding the flavor.

Blending flavors? The 3–6 g is the combined total, not the amount for each flavor.

  1. 1. Weigh the dough baseCalculate the unflavored component weight from your recipe. Keep your recipe’s flour, sugar, fat and liquids.
  2. 2. Mix through a compatible phaseMeasure the concentrate by weight. Distribute it through a water-containing ingredient at the appropriate mixing stage for your recipe.
  3. 3. Bake a small trialBake using your established method, then evaluate a cooled cookie. Do not taste raw dough or undiluted concentrate.

Know your formula. Propylene glycol, distilled water, natural and artificial flavors, Red #40 and Blue #1. This is Purple Ube, not Natural Ube or Clear Ube.

This water-soluble concentrate is for compatible water-containing recipes. It is not automatically suitable for plain chocolate or fat-based coatings. Review ingredients & product documents · Open the dosage calculator

Before your first batch

Ube cookie questions, answered.

How much ube extract should I use in cookies?

Use 0.3–0.6% of the unflavored dough component weight as a starting range, added on top. A 500 g base takes 1.5–3 g; a 1,000 g base takes 3–6 g. When combining flavors, share the total between them. Evaluate a baked, cooled test cookie before scaling.

Can I use this in ube crinkle cookies?

Yes, trial it in a compatible crinkle-cookie dough. It adds flavor and purple color, but it is not a complete cookie mix and does not supply the body of ube halaya or mashed yam. Follow an established recipe and test the finished cookie.

Will my cookies stay the same purple after baking?

The final shade depends on the recipe, dose and baking process. This formula includes Red #40 and Blue #1. Evaluate after baking and cooling; do not increase the flavor beyond what tastes right just to make a darker color.

Is this natural ube extract or clear ube extract?

This is Purple Ube Extract, made with natural and artificial flavors plus Red #40 and Blue #1. It is a different formula from Clear Ube Extract and Natural Ube Extract (No Coloring). Check the exact product ingredients before switching.

Can I replace vanilla extract spoon for spoon?

Do not assume the concentrations are equal. Use this product’s measured starting range and test a small batch. If you combine ube with another flavor, use the range as a combined total rather than applying the full range to each.

Can I flavor the filling or chocolate coating too?

A water-containing filling may be compatible, but calculate and test that component separately. Plain chocolate and fat-based coatings need an application-compatible formula; do not automatically substitute this water-soluble extract.
