Measure first. Make it repeatable.

How much flavor goes in your ice cream mix?

Start at 0.3–0.6% of the unflavored base weight. Weigh the flavor and add it on top of that base.

Weigh the complete unflavored mix before freezing or churning. Do not calculate from gallons or the volume of aerated ice cream.

Your 1 kg starting trial

1,000 g unflavored base
+ 3–6 g flavor

1,003–1,006 g after adding the flavor.

Blending flavors? The 3–6 g is the combined total, not the amount for each flavor.

Before your first batch

Ube ice cream questions, answered.

How much ube extract should I add to ice cream?

Start with 0.3–0.6% of the unflavored mix weight, added on top: 3–6 g per 1,000 g of mix. If you blend more than one flavor, that is the combined amount, not a full dose of each. Test a small batch and evaluate it after freezing.

Is this ube extract the same as ube halaya or purple yam?

No. Purple Ube Extract adds concentrated flavor and purple color. It does not replace the solids, sweetness or texture supplied by purple yam or ube halaya. Keep those ingredients when your recipe calls for them.

Will it make my ice cream purple?

This formula contains Red #40 and Blue #1. The finished shade depends on your ingredients and use level. Choose the amount for flavor; use a separate suitable food color if you need to adjust the shade rather than adding more concentrate only for color.

Can I use it in a dairy-free ice cream base?

It is water-soluble and can be trialed in a compatible water-containing plant-based recipe. Test your complete formula for flavor and texture and check every ingredient label against your dietary needs; the extract alone does not establish a finished recipe’s dietary status.

Can I add it to a chocolate shell?

Do not assume this water-soluble formula is suitable for plain chocolate or a fat-based coating. Use a flavor specifically recommended for that application. You can flavor the compatible ice cream base separately.

Which bottle should I start with?

The 2 oz bottle is a starting option for recipe trials. Larger sizes are available for established recipes. Check the product selector for current pricing and availability, and plan from measured grams per batch rather than drop counts.

Choose Purple Ube Extract for ube flavor and purple color, then find the level you love in your own ice cream recipe.
