These Caramelized Strawberry Creamsicles bring a gourmet twist to the classic creamsicle by caramelizing strawberries with butter, brown sugar, and honey before blending them with whole milk and Greek yogurt. The result is a creamy, naturally sweet, and richly flavored frozen dessert that’s easy to make, delightfully refreshing, and perfect for summer. Just pour the creamy strawberry mixture into molds, freeze, and enjoy a tangy-sweet popsicle that tastes like sunshine.
Ingredients
-
1 tablespoon water
-
1 teaspoon cornstarch
-
2 tablespoons unsalted butter
-
1 (16 oz) package strawberries, hulled and diced (~450 g)
-
¼ cup light brown sugar (~60 g)
-
¼ cup honey (~60 ml)
-
¼ teaspoon salt
-
¾ cup (180 ml) whole milk
-
½ cup (120 ml) plain or vanilla Greek yogurt
Directions
Mix the thickener – In a small bowl, stir together water and cornstarch until fully dissolved—this will help thicken the strawberry mixture.
Caramelize the strawberries – Melt butter in a saucepan over medium heat, add diced strawberries, then stir in brown sugar, honey, and salt. Cook until the juices reduce and the fruit becomes syrupy (about 12–15 minutes).
Thicken the sauce – Stir the cornstarch mixture again and mix it into the strawberries. Bring to a gentle boil and cook for 2 more minutes until the mixture has thickened. Allow it to cool completely.
Blend creamy base – In a measuring cup or bowl, combine whole milk with Greek yogurt; stir until smooth. Add the cooled strawberry syrup and mix until evenly pink.
Freeze in molds – Divide the creamy strawberry blend into popsicle molds (makes about 8–10). Freeze for at least 6 hours, or overnight, until fully set.
Serve and enjoy – Carefully unmold (rinse molds briefly under warm water if needed) and serve immediately, or keep in the freezer until ready to eat.
