Directions
Cook kiwi puree – Peel and chop 2–3 kiwis, blend into a smooth puree, then simmer with 1 tablespoon sugar for about 5 minutes until slightly thickened. Cool completely.
Prep cake crumbs – Crumble vanilla cake or muffins into small pieces and set aside.
Make creamy layer – Whisk softened cream cheese with sugar and vanilla until smooth. Separately, whip heavy cream until stiff, then gently fold into the cream cheese blend.
Assemble parfait cups – In each of four 220 ml cups, layer kiwi slices on the bottom and along the sides. Add crumbled cake, then a layer of creamy mixture. Repeat layers, ending with cream on top.
Chill before serving – Refrigerate the parfaits for at least 1 hour to set and meld flavors. Garnish with kiwi slices and mint before serving.
