    • 2 tbsp granulated sugar

    • 4 tbsp unsalted butter, melted

    blank

    • 12 oz (about 340 g) cream cheese, softened

    • 1/3 cup sour cream

    • 1/2 cup granulated sugar

    • 1 tsp vanilla extract

    • 1 large egg, room temperature

    • 1/4 cup heavy cream

    • 1–2 tsp blackberry extract

    blank

    • 1/4 cup blackberry jam, slightly warmed

    • Fresh blackberries (1 per cheesecake), optional

    Directions

    1. Prepare the crust: Preheat oven to 325 °F (160 °C). Mix graham crumbs, sugar, and melted butter until sandy. Press about 1 tbsp into each muffin tin cup and bake 6 minutes until fragrant.

    2. Whip the cheesecake filling: Beat softened cream cheese until silky. Add sour cream, sugar, vanilla, egg, heavy cream, and blackberry extract; mix until smooth and creamy—infused with aromatic berry flavor.

    3. Build & swirl: Divide the filling among crusts. Drop small spoonfuls of warm blackberry jam on top and swirl gently with a toothpick or skewer to create a marble effect, showcasing the blackberry extract’s deep color and aroma.

    4. Bake to just set: Bake 15–18 minutes until centers jiggle slightly. Remove and let cool.

    5. Chill & garnish: Refrigerate at least 3 hours (or overnight). Top each cheesecake with a fresh blackberry before serving for polished presentation.
