This Berry Hibiscus Flavor Extract Tea Cake combines a soft, buttery sponge with floral-hibiscus notes and a subtle fruity twist. The hibiscus extract adds delicate tartness and vibrant aroma to a classic tea cake base. The batter is mixed until light, baked to a golden finish, and can be topped with fresh berries or a drizzle of hibiscus syrup for added visual and flavor impact—an ideal cake for brunch, tea time.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp hibiscus flavor extract (natural, water-soluble)
  • ¾ cup milk
  • Optional: fresh berries or hibiscus syrup drizzle for serving

Directions

  1. Preheat & Prep Dry Ingredients: Preheat oven to 350 °F (175 °C). In a bowl, whisk together flour, baking powder, and salt.

  2. Cream Butter & Sugar: In a mixing bowl, beat softened butter and sugar until fluffy and pale.

  3. Add Eggs & Flavor Extract: Beat in eggs one at a time, then blend in vanilla and hibiscus flavor extract until evenly combined—this infuses each bite with floral clarity.

  4. Alternate Dry and Wet: Add dry ingredients and milk alternately in 2–3 batches, beginning and ending with dry ingredients. Mix gently until just combined for a tender crumb.

  5. Bake to Floral Perfection: Pour batter into a greased or lined 8-inch loaf or small bundt pan. Smooth the top and bake for 25–30 minutes, or until a toothpick inserted comes out clean.

  6. Cool & Finish: Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Optionally, top with fresh berries or swirl hibiscus syrup over the top for visual flair.
