Ingredients

    For the Crust and Topping

    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 cups all-purpose flour
    • 1 tsp baking powder
    • 1/4 tsp salt

    For the Filling

    • 2 cups fresh or canned peaches, chopped (or 1–1.5 tsp Peach Flavoring / Extract for extra peachy taste)
    • 1/2 cup granulated sugar
    • 1 tbsp cornstarch
    • 1/2 tsp cinnamon (optional)
    • 1 tsp lemon juice

    Directions

    1. Preheat and Prepare Pan Preheat oven to 350°F (175°C).
    2. Grease a 9x13-inch baking pan or line with parchment paper.
    3. Make the Crust In a bowl, cream 1 cup butter and 1 cup sugar until smooth.

    4. In a separate bowl, whisk together 2 cups flour, 1 tsp baking powder, and 1/4 tsp salt.
    5. Gradually mix the dry ingredients into the butter mixture until crumbly.
    6. Press about 2/3 of the mixture evenly into the prepared pan to form the crust.
    7. Prepare the Peach Filling In a medium bowl, combine 2 cups chopped peaches (or add 1–1.5 tsp peach extract), 1/2 cup sugar, 1 tbsp cornstarch, 1 tsp lemon juice, and 1/2 tsp cinnamon.

    8. Stir until evenly coated.
    9. Assemble the Bars Spread the peach filling evenly over the crust.

    10. Sprinkle the remaining 1/3 of the crumb mixture over the top.
    11. Bake Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and the filling is bubbly.

    12. Cool and Serve Allow to cool for 20 minutes, then slice into 12 bars.

    13. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
