Ingredients
2 cups (500 ml) heavy cream
½ cup (120 ml) whole milk
⅓ cup (65 g) granulated sugar
1 ripe mango, puréed (about ½ cup purée)
¼ to ½ teaspoon mango flavor extract (adjust for potency)
2 teaspoons (≈7 g) unflavored gelatin (or equivalent gelatin sheets)
Optional garnish: fresh mango cubes, mint leaves
Directions
Bloom gelatin. Sprinkle gelatin over 2 tbsp of cold milk; set aside to soften for 5–10 minutes.
Heat cream mixture. In a saucepan, gently warm the heavy cream, remaining milk, and sugar over medium heat, stirring until sugar dissolves—avoid boiling.
Infuse mango flavor. Remove from heat and whisk in mango purée and mango flavor extract until fully combined. Stir in bloomed gelatin until dissolved.
Pour & chill. Divide mixture into serving glasses or ramekins. Chill for 2–3 hours until the panna cotta fully sets to a silky consistency.
Garnish & serve. Top with diced fresh mango or a mint leaf before serving for a vibrant, tropical finish.
