Flavor selection, dosing & batch-planning guide
Choose oil-soluble flavoring for chocolate
Find flavoring oils for compatible chocolate, candy melts and fat-based coatings. Match the formula to the part you are flavoring: plain chocolate and a water-containing filling are different applications. Do not substitute a water-soluble extract into plain chocolate without checking compatibility.
Start with a flavor and a small chocolate trial
Compare oil-soluble peppermint flavoring for mint chocolate, oil-soluble pistachio flavoring for a nutty profile, or the full flavoring oils collection. Flavor concentrate does not replace nuts, paste, cocoa butter or other ingredients that provide texture. Review the exact product ingredients and current allergen information.
Starting amount: For most applications, start with a combined flavor amount of 0.3–0.6% of the unflavored batch or component weight, added on top. A 500 g base takes 1.5–3 g; a 1,000 g base takes 3–6 g. When combining flavors, share that total between them rather than dosing each at the full rate. Test the finished result before scaling. For hard candy, calculate from the cooked mixture before flavor is added.
For example, use the weight of the chocolate you are flavoring, not the weight of a separately flavored filling or garnish. Evaluate the chocolate after it sets. Our peppermint bark recipe offers a development starting point; validate your own result before production.
From recipe trial to larger batches
Choose a small bottle for trials and compare larger sizes after establishing your measured use rate. Check each product’s current size and price options. Read the flavor use guide or ask about bulk chocolate flavoring oils with your application and expected volume.
