Roll the mixture into bite-sized balls, coat them in sugar, cocoa, or coconut, and chill briefly. In under 15 minutes, you’ll have perfectly portable, festive treats bursting with rum flavor—great for gift-giving, parties, or holiday snacking.
Ingredients
2 cups vanilla wafer crumbs
1 cup finely chopped walnuts or pecans
½ cup confectioners’ sugar
6 tablespoons unsalted butter, softened
½ teaspoon rum extract
2 tbsp water
Optional coatings: additional confectioners’ sugar, cocoa powder, or shredded coconut
Directions
Blend the base: In a mixing bowl, combine vanilla wafer crumbs, chopped nuts, confectioners’ sugar, softened butter, and rum extract. Mix until evenly moistened—adjust water if needed for workable dough.
Form rum balls: Scoop teaspoon-sized portions and roll them into smooth, compact balls—the rum extract infuses deep flavor with minimal effort.
Coat and chill: Roll each ball in your preferred coating (sugar, cocoa, or coconut). Place on a tray, chill in the fridge for at least 30 minutes to firm up, and the rum extract’s aroma and taste will pop!
Serve or store: Arrange on a platter or store in an airtight container. These rum extract treats remain fresh and delectably boozy-tasting for up to a week refrigerated.
