Your sugar or sweetener system, gelatin or pectin base, acidity, addition stage and processing temperature all affect the finished result. Follow the selected formula’s current directions and your recipe’s process; confirm flavor and texture in a small finished batch.

For hard candy, confirm the formula and addition stage for your cooking process. This kit does not establish one universal dose or heat-stability limit. Flavor concentrate adds flavor without replacing sweeteners, fruit solids, acids or gelling ingredients.
