Step-by-Step: The Home Method

Step 1 — Prep everything first. Once sugar starts climbing past 250°F, things move quickly. Set out your molds or slab, measure your flavor oil into a small cup, have coloring within reach, and put your thermometer in place before you turn on the burner.

Step 2 — Dissolve. Combine sugar, water and corn syrup in the pan over medium heat, stirring gently just until the sugar fully dissolves. From this point on, stop stirring. Stirring a boiling syrup splashes crystals onto the pot walls and invites graininess.
