Here's the whole flow in one recipe. Bloom 3 tablespoons of gelatin in ½ cup cold water for 5 minutes. Warm ½ cup corn syrup with ¼ cup sugar and ¼ cup water until dissolved, stir in the bloomed gelatin off the heat until fully melted, and skim any foam. Troubleshooting Guide

My red faded to brownish after baking. Beet-family pigment met too much heat or an alkaline batter. Color darker up front, shift leavening toward baking powder, and save your truest reds for frostings, gummies, and no-bake work.

My color looks great in the bowl but pale in the finished gummy. Judge color in a spoonful of the actual warm base, not the bottle streak — and remember gummies darken slightly during setting and curing. Log drop counts and adjust next batch.
